It's Cinco de Mayo week in all the culinary classes and time for instructor Mr Slawson to make his famous guacamole. Students also nailed it on: homemade chips, pozole, elote, salsa verde, tamales, birria tacos, chili rellenos, horchata and more. Sampling all this over the next two days has Mr Slawson in need of another Latin American tradition - a siesta!

2025 Kentucky Derby is the 151st renewal of The Greatest Two Minutes in Sports and will run on May 3rd, 2025. Big Foot staff led by Mr Fenrick decided to get in the spirit of the event today, they dressed in their finery and the women in their hats and had a wonderful potluck buffet in the staff lounge today. They have done this for a few years and everyone gets in the spirit and gets excited about the race. The big question is who the winner will be!
